The city's breakfast: puffed kachoris fried in ghee, served on leaf plates with a thin spiced potato curry and a jalebi to finish. Eaten standing, early, before the lanes fill.

Coils of fermented batter fried crisp and dropped into saffron syrup, eaten hot with the kachori or with a cup of hot milk. Thinner and crunchier in Banaras than almost anywhere else.

Betel leaf folded around lime, catechu, gulkand and spices, sweet or plain. Granted a Geographical Indication tag in 2023. Offered after meals, at weddings, and to anyone who lingers at a shop long enough.

मलइयो

Milk churned into a saffron foam and set overnight in the winter dew, then served in a clay kulhad with pistachio. It dissolves before it can be chewed, and it exists only while the nights stay cold.

Cold milk ground with almonds, fennel, rose, pepper and cardamom, poured over ice. On Shivratri and Holi some shops add bhang, which is legal from licensed counters in the city; ask, and start small.

Thick curd whipped with sugar and topped with a slab of malai, in a kulhad you smash afterwards. Mango, saffron and rabri versions exist, but the plain one is the test of a shop.

टमाटर चाट

Tomatoes cooked down with potato, spices and ghee into a hot, sweet-sour mash, finished with crisp namak-para and coriander. Banaras's own chaat, unknown almost anywhere else.
